Meatloaf

It is very hard to make a meatloaf look appetizing in pictures. It tastes better than it looks!

Equipment

  • 1 Deep baking dish (13 X 9)

Ingredients
  

  • 1/4 cup Olive oil
  • 6 Cloves Garlic
  • 2 Cups Grated Pecorrino or Parmesan cheese or both
  • 3 lbs Ground beef veal and pork mixture, or 1 lb of each.
  • 2 med Yellow onions
  • 1/2 cup Basil
  • 4 large Eggs
  • 2 Tbsp Parsley
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1.5 cups Breadcrumbs
  • 2 Tbsp Worcestershire
  • 2 Tbsp Balsamic vinegar
  • 16 oz Tomato sauce fresh (preferred) or store bought

Instructions
 

  • Preheat oven to 350F
  • Mince garlic and onions. Heat large skillet on medium-high heat. When pan is hot, add oil. When oil is hot (will appear shimmery instead of smooth), add onions. Stir occasionally and cook until onions are translucent, approximately 5-7 minutes. Add garlic, stir occasionally and cook for approximately 3 minutes, then remove onions and garlic to large bowl. If garlic starts to turn brown before 3 minutes, turn off heat and remove onions and garlic to large bowl.
  • Add remaining ingredients, minus tomato sauce to the large bowl. Mix well, if using hands be careful of hot onions and garlic.
  • Add mixture to baking dish and shape into a loaf. Cover with tomato sauce. Put in oven and cook for 50-60 minutes.
