Meatloaf
It is very hard to make a meatloaf look appetizing in pictures. It tastes better than it looks!

- 1/4 cup Olive oil
- 6 Cloves Garlic
- 2 Cups Grated Pecorrino or Parmesan cheese or both
- 3 lbs Ground beef veal and pork mixture, or 1 lb of each.
- 2 med Yellow onions
- 1/2 cup Basil
- 4 large Eggs
- 2 Tbsp Parsley
- 1 Tsp Salt
- 1 Tsp Pepper
- 1.5 cups Breadcrumbs
- 2 Tbsp Worcestershire
- 2 Tbsp Balsamic vinegar
- 16 oz Tomato sauce fresh (preferred) or store bought
Preheat oven to 350F
Mince garlic and onions. Heat large skillet on medium-high heat. When pan is hot, add oil. When oil is hot (will appear shimmery instead of smooth), add onions. Stir occasionally and cook until onions are translucent, approximately 5-7 minutes. Add garlic, stir occasionally and cook for approximately 3 minutes, then remove onions and garlic to large bowl. If garlic starts to turn brown before 3 minutes, turn off heat and remove onions and garlic to large bowl.
Add remaining ingredients, minus tomato sauce to the large bowl. Mix well, if using hands be careful of hot onions and garlic.
Add mixture to baking dish and shape into a loaf. Cover with tomato sauce. Put in oven and cook for 50-60 minutes.
