Brushetta

Brushetta is a combination of oinion, tomatoes, mozzarella, and garlic and often seved on toasted bread.

Ingredients
  

  • 6 Med Roma plum tomatoes
  • 1 Med Red onion
  • 8 oz Mozzarela block or ball
  • 4 Cloves Garlic
  • 1 Loaf Italian bread
  • 2 oz Shredded Pecorrino or Parmeasan cheese or both
  • 1 Tsp Pepper
  • 2 Tbsp Parsley
  • 1 Tbsp Basil
  • 1 Tsp Salt
  • 2 Tbsp Olive oil

Instructions
 

  • Preheat oven to 450F
  • Chop tomatoes, onion and mozzarella into 1/4 – 1/2 inch cubes. Mince garlic. Add to large bowl.
  • Add basil, olive oil, salt, pepper, and parsley to bowl and mix well.
  • Slice bread into 1/2 inch slices and place on baking dish. Scoop on a heaping serving of brushetta mixture on top of each slice. Sprinkle parmesan or pecorrino on top of all slices.
  • Place on top rack for 5-6 minutes.
