Brushetta
Brushetta is a combination of oinion, tomatoes, mozzarella, and garlic and often seved on toasted bread.

- 6 Med Roma plum tomatoes
- 1 Med Red onion
- 8 oz Mozzarela block or ball
- 4 Cloves Garlic
- 1 Loaf Italian bread
- 2 oz Shredded Pecorrino or Parmeasan cheese or both
- 1 Tsp Pepper
- 2 Tbsp Parsley
- 1 Tbsp Basil
- 1 Tsp Salt
- 2 Tbsp Olive oil
Preheat oven to 450F
Chop tomatoes, onion and mozzarella into 1/4 - 1/2 inch cubes. Mince garlic. Add to large bowl.
Add basil, olive oil, salt, pepper, and parsley to bowl and mix well.
Slice bread into 1/2 inch slices and place on baking dish. Scoop on a heaping serving of brushetta mixture on top of each slice. Sprinkle parmesan or pecorrino on top of all slices.
Place on top rack for 5-6 minutes.
