Shrimp Scampi
Garlicky, buttery, oily, lemony, shrimp.
Ingredients
- 1 lb Raw shrimp preferably not frozen
- 8 oz Pasta long noodle best for sauce
- 4 Tbsp Butter
- 1/4 Cup Grated Pecorrino or Parmesan cheese or both
- 1/2 Cup Olive oil
- 8 Cloves Garlic
- 2 Tsp Salt
- 1 Tsp Pepper
- 1 Tbsp Parsley
- 1 Tbsp Basil
- 1 Tsp Oregano
- 1 large Lemon
- 1/2 lb Fettucine or linguine
Instructions
- Bring large pot of water to boil. Add 1 tsp salt. Add in pasta. You can complete the next step while waiting for water to boil
- Cut garlic into slices. Peel and devein shrimp.
- Heat large skillet on medium high heat. When hot add 2 tbsp butter. When butter has melted add in shrimp. Cook shrimp until outer edges start to turn pink and then flip, approximately 4 minutes. Add in garlic and cook for an additional 4 minutes until shrimp is completely pink.
- Reduce heat to low and add in remaining ingredients. Stir occasionally.
- When pasta is done cooking, drain. Add pasta back to pot and add in shrimp and sauce from skillet. Mix throuroughly and serve.
