Shrimp Scampi

Garlicky, buttery, oily, lemony, shrimp.

Ingredients
  

  • 1 lb Raw shrimp preferably not frozen
  • 8 oz Pasta long noodle best for sauce
  • 4 Tbsp Butter
  • 1/4 Cup Grated Pecorrino or Parmesan cheese or both
  • 1/2 Cup Olive oil
  • 8 Cloves Garlic
  • 2 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tbsp Parsley
  • 1 Tbsp Basil
  • 1 Tsp Oregano
  • 1 large Lemon
  • 1/2 lb Fettucine or linguine

Instructions
 

  • Bring large pot of water to boil. Add 1 tsp salt. Add in pasta. You can complete the next step while waiting for water to boil
  • Cut garlic into slices. Peel and devein shrimp.
  • Heat large skillet on medium high heat. When hot add 2 tbsp butter. When butter has melted add in shrimp. Cook shrimp until outer edges start to turn pink and then flip, approximately 4 minutes. Add in garlic and cook for an additional 4 minutes until shrimp is completely pink.
  • Reduce heat to low and add in remaining ingredients. Stir occasionally.
  • When pasta is done cooking, drain. Add pasta back to pot and add in shrimp and sauce from skillet. Mix throuroughly and serve.
