Shrimp Scampi
Garlicky, buttery, oily, lemony, shrimp.

- 1 lb Raw shrimp preferably not frozen
- 8 oz Pasta long noodle best for sauce
- 4 Tbsp Butter
- 1/4 Cup Grated Pecorrino or Parmesan cheese or both
- 1/2 Cup Olive oil
- 8 Cloves Garlic
- 2 Tsp Salt
- 1 Tsp Pepper
- 1 Tbsp Parsley
- 1 Tbsp Basil
- 1 Tsp Oregano
- 1 large Lemon
- 1/2 lb Fettucine or linguine
Bring large pot of water to boil. Add 1 tsp salt. Add in pasta. You can complete the next step while waiting for water to boil
Cut garlic into slices. Peel and devein shrimp.
Heat large skillet on medium high heat. When hot add 2 tbsp butter. When butter has melted add in shrimp. Cook shrimp until outer edges start to turn pink and then flip, approximately 4 minutes. Add in garlic and cook for an additional 4 minutes until shrimp is completely pink.
Reduce heat to low and add in remaining ingredients. Stir occasionally.
When pasta is done cooking, drain. Add pasta back to pot and add in shrimp and sauce from skillet. Mix throuroughly and serve.
